The syrup festival in Témiscouata - De l’érable à la table

For a fourth spring, maple syrup will be flowing abundantly in Témiscouata’s restaurants. From April 2 to 20, 2025, local chefs will be serving up dishes specially concocted from the prodigious sap, as part of the De l’érable à la table event.

Launched in 2020, the initiative was the brainchild of six young citizens who wanted to showcase the pride of the Témiscouata region.

“The Témiscouata MRC is the largest producer of maple syrup in the Bas-Saint-Laurent region. We produce a host of delicious products that deserved to be better promoted,” recalls Anacha Rousseau, one of the initiators.

Local restaurateurs quickly rallied around this sweet idea. This year, seven establishments – from microbreweries to eco-friendly grocery stores to gourmet inns – have let themselves be inspired by the golden muse to create original dishes your taste buds won’t soon forget. Their dishes showcase not only the sovereign syrup, but also all the members of the royal family, i.e. the products processed by local maple groves.
